Mincemeat Cookies

This might sound weird but give it a try.

This cookie has been my grandfather's favorite since I can remember.

This recipe is super simple and yummy. Just don't let the name deter you.


Ingredients:

  • 1/2 Cup Butter

  • 1/2 Cup Shortening

  • 1 Cup White Sugar

  • 1/2 Cup Brown Sugar

  • 2 Eggs

  • 1 Tsp Vanilla

  • 3 Cups Flour

  • 1 Tsp Baking Soda

  • 1 Jar (8 ounces) Mincemeat

Directions:

  1. Preheat oven to 375 degrees.

  2. Cream butter, shortening and sugars together.

  3. Add eggs and Vanilla. Mix well.

  4. Sift flour and baking soda together.

  5. Add to the cream mixture.

  6. Chill dough for at least two hours.

  7. Roll dough to 1/4 inch thick with two cookies alike.

  8. Take 1 Tsp of mincemeat on one cookie.

  9. Place the second cookie on top and seal the edges together.

  10. Bake for 10 minutes or until done.
